  20. 2 medium sized chopped brinjal
  21. 2 medium size chopped potato
  22. 1 medium size chopped tomato
  23. 1 spoon grated ginger
  24. 1 spoon mustard seeds
  25. 1/2 tbspn turmeric powder
  26. 1/2 tbspn. Red chilli powder
  27. 1/2 tbspn garam masala powder
  28. to taste Salt
  29. For roti-
  30. 100 gms whole wheat flour
  31. as needed Water
  32. 1/2 tbspn Oil
  33. 1 spoon milk
  34. For Dahi bundi raita-
  35. 100 gms curd
  36. 50 gms salted bundi
  37. 1/2 tbspn Red chilli powder
  38. 1/2 tbspn salt
  39. For stuffed chilli-
  40. 125 gms long chilli (Golar marcha)
  41. 5 tbspn groundnut powder
  42. 2 tbspn grated coconut
  43. 1 tbspn sesame seeds
  44. 1 tbspn red chilli powder
  45. 1 tbspn cumin coriander powder
  46. 1 tbspn sugar
  47. 1/2 tbspn turmeric powder
  48. 2 spoons besan
  49. to taste Salt
  50. as required Oil
  51. For Salad
  52. 1 each Chopped tomato and cucumber
  53. as per taste salt
  54. For Rice-
  55. 100 gms rice
  56. 1 tbsp oil
  57. pinch salt
  58. For Gujarati dal-
  59. 1 cup soaked tuvar daal
  60. 7-8 Groundnuts
  61. Pinch asafoetida
  62. 5-6 dry fenugreek seeds
  63. 1/2 tbspn turmeric powder
  64. 1 tbspn red chilli powder,
  65. 1 tbspn coriander/ cumin powder
  66. 1/2 cup jaggery
  67. 1 lemon
  68. 1 spoon grated ginger
  69. For tadka in daal-
  70. 1 tbspn mustard seeds
  71. 1 tbspn cumin seeds
  72. as required Oil

Steps to make to make Gujarati Thali

  1. Sev Tameta subji, take a pan add oil to heat, add mustard and cumin seeds and crackle it. Add chopped tomato and salt. Saute it till it cooked. Add turmeric, red chilli powder. Saute it for 2-3 minute. Add plain sev and mix well.
  2. For elephant yam subji, take pressure cooker and add oil and put it on gas. Add all ingredients into it. Close the lid and cook under pressure till pressure is released 3 times.Open the lid of the cooker after the pressure reduces completely, sprinkle coriander leaves.
  3. For brinjal potato subji, take pressure cooker, take oil to heat, add mustard seeds. Let them to splutter it. Add all ingredients and water. Close the lid and cook under pressure till pressure is released 3 times.Open the lid of the cooker after the pressure reduces completely, sprinkle coriander leaves.
  4. For Dahi bundi raita, take warm water and soaked bundi for 5 minute. Now strain water. Now whip Dahi add bundi, salt and red chilli powder.
  5. For roti, make a dough. Make round ball of dough. Make them circle and put it on hot tava. Flip onto other side. Spread ghee
  6. For rice, take all ingredients in cooker. Close the lid and cook under pressure till pressure is released 3 times.
  7. For Gujarati dal,take soaked daal, asafoetida, groundnut, dry fenugreek seeds in cooker. Close the lid and cook under pressure till pressure is released 3 times.Open the lid of the cooker after the pressure reduces completely. Blend them well. Now add all remaining ingredients except lemon. Add water stir and keep on stove top. Bring daal simmer on a medium flame upto 20-25 minutes. Add lemon and stir well.
  8. For tadka, heat the oil in small pan. Add cumin seeds and mustard seeds. Let them splitter. Pour them on the dal and stir daal well.
  9. For salad, mix cucumber, tomato and salt
  10. For stuffed chilli, make a long cut on middle of the chilli. Remove seeds out of it. Wash well with water. Now take bowl add groundnut powder, sesame seeds, besan, red chilli powder, cumin coriander powder,sugar, turmeric powder. Mix well. Add oil and mix well. Fill the stuffing in chilli. Now take oil in pan. Heat it. Add chilli into this. Sprinkle little bit water. Cover the pan with lid till it cooked. After cooked mix well and saute for 2-3 minutes.
