  1. 500 grams mutton
  2. 500 grams preminum class basmati rice
  3. For boiling basmati rice:
  4. 2 green cardemoms
  5. 1 inch cinnamon
  6. 1/4 cup chopped coriander-mintleaves
  7. 2 bay leaves
  8. 1.5 tbsp salt
  9. 6 cups water for boiling
  10. For mutton:
  11. 3 onions (cut into fine slices)
  12. 1 tbsp ginger garlic paste
  13. 1/2 tsp turmetic powder
  14. 1 tsp red chilli powder
  15. 1 tsp kashmiri cjilli powder
  16. 2 tsp coriander powder
  17. 1/2 tsp garam masala powder
  18. 1/2 cup curd
  19. 100 ml oil
  20. Whole spices:
  21. 2 green cardemoms
  22. 2 bay leaves
  23. 1 black cardemom
  24. 4 cloves
  25. 1 inch cinnamon stick
  26. 1/2 mace
  27. 1/2 tsp black cumin
  28. as per taste Salt
  29. as required For garnishing :green chillies,mint-coriander leaves
  30. 1/2 cup milk with a pinch of orange food colour
  31. 1 tsp kewra water

Steps to make to make Mutton Biryani

  1. Wash and soak badmati rice for 30 minutes.
  2. Boil rice 80% with mentioned ingredients.Drain and keep aside.
  3. Heat oil in a pan/kadahi.Add whole spices.Add onion and fry till golden brown.
  4. Add mutton.Saute for 2-3minutes.Add powdered spices,mix well.Saute 1 minute.Add curd.Cook for 2-3minutes.
  5. Add 2 cups water,let it boil.Add salt.Cover and cook for 40 -45 minutes till mutton is soft.
  6. Assembling of biryani:Take out mutton from pan.Add half of rice in the same kadahi.Add half of mutton.Put a layer of chopped coriander -mint and some fried onion.
  7. Put another layer of rice.Repeat the process.Pour food colour and kewra water over.
  8. Seal the vessel with alluminium foil,cover with lid and put on lowest flame for 10-15minutes.
  9. After 15 minutes,serve the biryani with raita.Enjoy.
