- 2 Potatoes, peeled and quartered
- 2 tbsp Garlic paste
- 2 tbsp Ginger paste
- 1/2 cup Yogurt, whipped
- 1 cup Oil
- 1/2 tsp Turmeric powder
- 1 tsp Kashmiri Red chilli powder
- 1 tbsp Bombay biryani masala
- 1 tsp Lemon juice
- 1/4 cup Milk
- A few Saffron strands
- 1 tsp Kewda
- 2 tbsp Coriander leaves, finely chopped
Steps to make to make Bombay Chicken Biryani
- Marinate chicken pieces with ginger paste, garlic paste, turmeric powder and 1/2 tsp salt.
- Fry potatoes in a separate pan with adding orange food colour and keep aside.
- Fry sliced onions in hot oil until golden in colour.
- Take 1/4 of fried onions and keep aside for further use.
- Add tomatoes in fried onions and fry until oil separates.
- Add marinated chicken, yogurt, Bombay biryani mix, chilli powder and stir fry for 10 minutes.
- Add fried potatoes and mix well.
- Add 1 cup water over and cook on low heat until chicken is tender.
- For rice, heat 1 tbsp ghee in a pan and put whole masalas.
- Add washed rice, fry for a minute and add 1 tsp salt and 6 cups water.
- Cover and cook till rice semi cooked.
- Heat 1 tbsp ghee and spread half rice in pot.
- Sprinkle half of fried onions and chopped coriander leaves.
- Mix saffron and kewda in milk and add pour this over rice.
- Spread cooked chicken over it, then top with remaining rice and add lemon juice.
- Again sprinkle fried onions, chopped coriander leaves and saffron milk.
- Cover the pot and cook on low heat until rice is fully cooked, mix well and serve hot.
