  1. 2 cups urad dal
  2. 2 cups raw rice
  3. 2 Cups curd
  4. 2 teaspoons fenugreek seeds
  5. 2 teaspoons ginger paste
  6. 2 teaspoons green chilli paste
  7. As per taste salt
  8. 2 teaspoons sugar
  9. 2 teaspoons black mustard seeds
  10. 4-5 dried red chillies
  11. 1/2 teaspoon asafoetida
  12. 2 teaspoon white sesame seeds
  13. 1/2 cup grated coconut
  14. 2-3 sprigs curry leaves
  15. 1/2 cup semolina/suji
  16. 3 Tablespoons oil
  17. As required green coriander chopped

Instructions to make to make Khatta Dhokla

  1. First soak the urad dal and fenugreek seeds together and rice seperately for 4 hours.
  2. Then after four hours grind them seperately in mixer grinder. Now mix the batter and pour them together in a big mixing bowl and add the suji, curd and sugar which facillitates the fermentation.
  3. Then mix it with our clean washed hands as the normal bacterial flora in our hands when mixed with the batter let the fermentation fasten. As we know fermentation is the next step which is going to take almost 8-10 hours depending on the temperature also.
  4. After the fermentation is done we will add salt ginger paste, salt and also veggies grated according to your wish. I added grated carrot 🥕.
  5. Then heat the steamer orna big kadai with water and cover it with lid to form steam. Now grease a plate or aluminium cake tin.
  6. Pour the batter and fill it half way. Then place the plate or tin inside the steamer or kadai whatever you are using. Steam cook for 10 mins and check with tooth pick till it comes out clean without being sticky.
  7. When it's done let it cool and try to demould in a tray and cut it in a diamond or square shapes.
  8. Now at last for tempering heat oil in a tadka pan add mustard seeds, dried red chilli, asafoetida, curry leaves and sesame seeds and let all splutter until the rich aroma and flavour comes out and then add by sprinkling it over the dhoklas.
  9. Serve it with green chutney of mint and coriander leaves or with ginger tamarind chutney with red chilli. Garnish the dhoklas with grated coconut and chopped green coriander leaves, although I skipped because it was not available in the market.
