Ingredients and spices that need to be Make ready to make Egg Masala Biryani:

  1. 2 cups Semi cooked and cooled basmati rice
  2. 6 Boiled cooled and peeled eggs
  3. 4 tablespoons Ghee
  4. 2 tsp Cumin seeds
  5. 2 tablespoons Ginger garlic paste
  6. 2 tablespoons Biryani masala
  7. 2 teaspoons Chilli powder
  8. 2 teaspoons Turmeric powder
  9. 2 tsp Coriander powder
  10. 1 tsp Saunf(fennel) powder
  11. 1/2 cup Chopped onion
  12. 2 Chopped tomatoes medium
  13. 2 Chopped green chillies
  14. 2 tbsp Chopped coriander leaves
  15. 10-12 Chopped mint leaves
  16. 2 tablespoons Fried onions
  17. 2 tablespoons Fried cashews
  18. 5 cardamom
  19. 2 bay Leaves
  20. 1 tablespoon Saffron infused milk
  21. 1/2 cup Curd (whisked)
  22. to taste Salt
  23. as needed Water for cooking
  24. 3 cloves
  25. 1 inch cinnamon stick

Steps to make to make Egg Masala Biryani

  1. First, heat 2 tablespoons ghee in a pan. Add 1 tsp ginger garlic paste, 1/2 tsp Turmeric powder and stir well. Add the eggs, 1 tsp salt, 1 tsp coriander powder 1 tsp chilli powder and stir well. Then sprinkle some water, cover and cook for 2 minutes. Then remove from flame, cover and let it cool aside.
  2. Then in another pan, heat 1 tablespoon ghee. Then add cumin seeds, 1/2 portion of each the whole spices and combine well. Then add chopped onion and fry well. Then add 1 tbsp ginger garlic paste and fry well.
  3. Then add chopped tomatoes, green chillies and spice powders as per taste. Then add the curd and mix well. Sprinkle some water, cover and cook till the mixture is soft and aromatic. Then add in the eggs and adjust the salt and spices. Stir well and cook for 2 minutes. Sprinkle some coriander leaves and leave to cool.
  4. Now, heat 1 tablespoon ghee in a wok. Add cumin seeds. When they splutter, add the remaining whole spices and remaining ginger garlic paste. Stir well to cook. When they turn aromatic, add the rice. Add salt, Biryani masala as per taste and combine well. Add some water and cover the pan.
  5. Cook on low flame till rice is done but not still firm. Take off from stove. Mix the lemon juice when cooled.
  6. To assemble the Biryani, take a deep and wide wok or pan. Add 1 tsp ghee at the base. Then add a layer of rice. Then add some egg masala mixture. Again give a layer of rice. Sprinkle some fried onions and garlic. Spread some chopped coriander and mint leaves.
    Then sprinkle some saffron milk and again repeat the rice -masala- toppings till the top layer is of rice.
  7. Then add 1 tsp ghee from sides and cover the lid. Cover again with a towel and cook for 5 to 8 minutes on low flame. Egg Masala Biryani is ready. Enjoy with homemade raitha
