  15. 2 Sliced Onion
  16. 400 gm Mutton Pieces
  17. 1/2 tbsp Garlic Paste
  18. 1/2 tbsp Ginger Paste
  19. as needed Water
  20. as per taste Salt
  21. 1/2 tsp Turmeric Powder
  22. 1/2 Cup Yogurt
  23. 1/2 tbsp Red Chilli Powder
  24. 5-6 Dried Plums
  25. As per requirement Fresh Coriander

  27. 125 gm Potatoes(Boiled With Zarda Pilaf Colour)

  29. 400 gm Soaked Biryani Rice
  30. As required Water
  31. as per taste Salt
  32. as required Lemon Juice

  34. As needed- Sliced Tomatoes
  35. as needed Fresh Coriander leaves
  36. as required Fresh Mint
  37. as needed Roasted Black Peppercorns
  38. 1/4 tsp Zarda Pilaf Colour

  40. as per taste Fried Onion

Instructions to make to make Mutton Sindhi Biryani

  1. In a mixie jar grind all the roasted spices, keep it aside.
  2. In a pressure cooker add oil and ghee, let it heat.
  3. Add sliced onion and fry until it becomes translucent.
  4. Add mutton pieces along with ginger- garlic paste and cook until the mutton colour changes.
  5. Add salt, turmeric powder and red chilli powder, mix it well.
  6. Add yogurt on a low flame and stir it nicely.
  7. Add prepared Sindhi biryani spices, mix it well.
  8. Add water, put a lid and let it cook until the mutton becomes tender.
  9. In a pot add soaked rice along with water, salt and lemon juice. Once a boil comes cover the pot and let it cook on a low flame.
  10. Open the cooker, add boiled potatoes and dried plums, mix it well and dry the extra gravy.
  11. Once the mutton is ready and rice is ready start the preparation for layering of the biryani.
  12. In a wok spread cooked rice, mutton pieces, sliced tomatoes, green chillies, coriander leaves and mint leaves, black peppercorns and fried onion.
  13. In the same way prepare the second layer.
  14. Finally on the last layer, spread rice, pour zarda pilaf colour (add 1tbsp water and dilute it in zarda pilaf colour) and lemon wedges, fried onion, coriander leaves and mint leaves.
  15. Cover the lid and let it cook on a low flame for 15 minutes.
  16. After 15 minutes put off the flame, and let it rest for another 5 minutes.
  17. Open the lid and dish out the mutton Sindhi biryani.
